Paleo Pumpkin Granola

Any cereal lovers you there? Growing up, cereal was my favorite go-to meal. I could eat it for breakfast, lunch, dinner, dessert, and for snack time. In college I lived on it! As I got into health coaching and wanting to feed my family better, I realized my beloved relationship with cereal had to go.

In our house we try to cut the processed food 80% of the time and avoid HFCS (high fructose corn syrup), food dyes, gluten, ingredients we don’t understand and refined sugar. We do eggs and avocado a lot along with smoothies. But, lately since the weather has been getting colder I needed something heartier and crunchy. Whoo hoo! The answer came in a Pinterest find and it wasn’t a “fail” like some of my Pinterest recipes. I am happy that I LOVE it and that my kiddos love it too!

Paleo Pumpkin Granola

Ingredients

  • 1/2 cup canned pumpkin
  • 3 cups chopped nuts (pecans, cashews, almonds, walnuts, pumpkin seeds)
  • 1 cup coconut flakes (unsweetened - you are already sweet enough!)
  • 1 cup dried fruit (raisins, cranberries, cherries, blueberries)
  • 1/4 cup coconut flour
  • 2 tablespoons coconut oil
  • 2 tablespoons chia seeds
  • 1 tablespoon pumpkin pie spice (or a few drops of your favorite essential oils)
  • 1/2 cup maple syrup
  • 1/2 tsp Salt

Instructions

  1. Preheat oven to 325 F and lin a baking sheet with parchment.
  2. Melt coconut oil in the oven as it preheats.
  3. In a large bowl combine all ingredients.
  4. Place granola on parchment lined cookie sheet
  5. Bake for 20 minutes.
  6. Stir and bake again for approximately 10 minutes.
  7. Fully cool your granola and store in an air tight container
  8. ENJOY!

OPTIONAL – if you are an essential oil lover like me add in a few drops of CASSIA, CLOVE or even ON GUARD. I have played with all of them and they are GREAT additions!
