Kale Sausage Soup

My husband and I love this soup so much that we eat it almost once a week! It makes for great leftovers which is a necessity in our crazy busy life!

I used our new Instant Pot for the recipe below, but you can make it on the stove or in the crockpot. Whatever method you use, the key is to brown your sausage, chop your ingredients and add the kale and coconut milk last.

Kale Sausage Soup Instapot


  • 2 Tbs olive oil
  • 2 lb ground or diced sausage (see note)
  • 4 cloves of garlic, minced
  • 1 onion, diced
  • 6 stalks of celery, diced
  • 6 carrots, diced
  • 1/2 head of cauliflower chopped (your "faux potatoes")
  • 1 big bunch of Kale, chopped
  • 2 cartons of chicken broth
  • 1 tsp fennel
  • 1 tsp red pepper flakes (optional)
  • salt and pepper
  • 1 can full fat coconut milk


  1. Using the "saute" function on your Instant Pot, heat the oil and cook the sausage. Note - I buy organic spicy chicken sausages and remove the casing. I used 5 large links and ripped off the casing and chopped them into small bits. You can do it this way, or just slice your sausage small.
  2. Brown your sausage and remove excess oil (optional).
  3. Add onion and garlic, cook additional minute.
  4. Add chopped carrots, celery, cauliflower and spices.
  5. Lock your Instant Pot lid and place it to sealed.
  6. Cook at high pressure for 10 minutes.
  7. When cooking is done, allow the natural pressure to release. When pressure has released remove lid.
  8. Add chopped kale and coconut milk.
  9. Once the Kale is cooked, serve. Add fresh parmesan (optional).
  10. A great addition to the meal are keto soft pretzels. They taste amazing dipped in the soup. I will post on them soon!
